Ingredients

4 cups pecan halves

1 large egg white

1 tablespoon water

1 teaspoon vanilla extract

1 cup granulated sugar

1 teaspoon ground cinnamon

1/2 teaspoon salt

2 tablespoons unsalted butter, melted


Instructions

1. Preheat the oven to 300°F and line a large baking sheet with parchment paper.

2. In a large bowl, whisk the egg white with the water until foamy.

3. Stir in the vanilla extract and melted butter.

4. In a separate bowl, mix together the sugar, cinnamon, and salt.

5. Add the pecan halves to the egg white mixture and toss until evenly coated.

6. Sprinkle in the cinnamon sugar mixture and stir until all the pecans are thoroughly coated.

7. Spread the pecans in a single layer on the prepared baking sheet.

8. Bake for 35 to 45 minutes, stirring every 15 minutes for even coating and roasting.

9. Remove from the oven and let the pecans cool completely on the pan until crisp.

10. Store in an airtight container once fully cooled.

Notes

For the best texture, let the pecans cool completely before serving because the coating crisps up as they rest.

Stirring the pecans during baking helps the sugar coating caramelize evenly and keeps them from clumping together.
