Ingredients

1 lb salmon, skin removed and cut into cubes

2 cups cooked white rice

2 tbsp soy sauce

1 tbsp honey

1 tbsp sriracha

1 tsp sesame oil

2 cloves garlic, minced

1 tsp fresh ginger, grated

1 avocado, sliced

1 cup cucumber, thinly sliced

1 cup shredded carrots

1 cup shelled edamame

2 green onions, sliced

1 tbsp sesame seeds

1/3 cup mayonnaise

1 tbsp sriracha for spicy mayo


Instructions

1. Cut the salmon into bite-sized cubes and place it in a bowl.

2. In a small bowl, whisk together soy sauce, honey, sriracha, sesame oil, garlic, and ginger.

3. Pour the sauce over the salmon and toss gently to coat. Let it sit for 10 minutes.

4. Warm the cooked rice if needed and divide it between serving bowls.

5. Heat a skillet over medium-high heat and cook the salmon for 6 to 8 minutes, turning gently, until caramelized and cooked through.
