These Spicy Salmon Rice Bowls are the kind of easy dinner that looks impressive but comes together with simple, fresh ingredients. Tender glazed salmon, fluffy rice, creamy avocado, crisp cucumber, shredded carrots, and edamame all come together in one vibrant bowl with bold flavor and plenty of texture. It is a quick dinner, easy recipe, healthy-ish meal, and one of my favorite food ideas for busy weeknights, lunch prep, or fresh dinner ideas when I want something satisfying without making a complicated meal.
Ingredients
1 lb salmon, skin removed and cut into cubes
2 cups cooked white rice
2 tbsp soy sauce
1 tbsp honey
1 tbsp sriracha
1 tsp sesame oil
2 cloves garlic, minced
1 tsp fresh ginger, grated
1 avocado, sliced
1 cup cucumber, thinly sliced
1 cup shredded carrots
1 cup shelled edamame
2 green onions, sliced
1 tbsp sesame seeds
1/3 cup mayonnaise
1 tbsp sriracha for spicy mayo
Instructions
1. Cut the salmon into bite-sized cubes and place it in a bowl.
2. In a small bowl, whisk together soy sauce, honey, sriracha, sesame oil, garlic, and ginger.
3. Pour the sauce over the salmon and toss gently to coat. Let it sit for 10 minutes.
4. Warm the cooked rice if needed and divide it between serving bowls.
5. Heat a skillet over medium-high heat and cook the salmon for 6 to 8 minutes, turning gently, until caramelized and cooked through.
6. In a small bowl, stir together the mayonnaise and remaining sriracha to make the spicy mayo.
7. Arrange the cooked salmon, avocado, cucumber, shredded carrots, and edamame over the rice.
8. Drizzle with spicy mayo and finish with green onions and sesame seeds before serving.
Notes
For the best texture, do not overcook the salmon. It should be lightly caramelized outside and still tender inside.
Store the components separately if you are meal prepping so the vegetables stay crisp and the avocado can be added fresh.
