Description
Strawberry Oat Bars are the kind of easy recipe I get excited to make because they check every box at once. They are buttery, fruity, soft in the center, and topped with a golden oat crumble that tastes like something from a cozy bakery. This is a perfect quick breakfast treat, easy dessert, sweet snack, brunch idea, and make-ahead food idea for busy days. If you love strawberry desserts, oat bars, crumb bars, baked fruit bars, and easy homemade baking recipes, this one brings all of that together in one pan with simple ingredients and big flavor.
Ingredients
2 cups old-fashioned oats
1 1/2 cups all-purpose flour
3/4 cup light brown sugar
1/4 cup granulated sugar
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup unsalted butter, melted
2 cups fresh strawberries, chopped
2 tablespoons cornstarch
1 tablespoon lemon juice
1 teaspoon vanilla extract
Instructions
1. Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper.
2. In a large bowl, mix the oats, flour, brown sugar, granulated sugar, salt, and cinnamon.
3. Pour in the melted butter and stir until the mixture becomes crumbly and evenly moistened.
4. Reserve about 1 cup of the crumble mixture for the topping.
5. Press the remaining mixture firmly into the bottom of the prepared pan to form the crust.
6. In another bowl, combine the chopped strawberries, cornstarch, lemon juice, and vanilla extract.
7. Spread the strawberry filling evenly over the crust.
8. Sprinkle the reserved crumble mixture over the top.
9. Bake for 35 to 40 minutes, until the top is lightly golden and the filling is bubbling.
10. Let the bars cool completely before slicing and serving.
Notes
Let the bars cool fully before slicing so the strawberry layer sets properly and the squares hold their shape.
If your strawberries are extra juicy, add an extra teaspoon of cornstarch to help keep the filling thick and jammy.
