  • 2 pounds Yukon Gold or baby potatoes
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 4 cloves garlic, crushed or minced
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh thyme or parsley (optional, for garnish)

Instructions
 

  • Wash and scrub the potatoes thoroughly, leaving the skin on for texture. Cut them in half or into large wedges.
  • In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper until well combined.
  • Place potatoes in a large baking dish, pour the marinade over, and toss well to coat.
  • Preheat oven to 400°F (200°C). Roast uncovered for 45–55 minutes, turning occasionally, until edges are golden and crisp.
  • Sprinkle with fresh thyme or parsley before serving. Serve hot.

Notes

For extra crispiness, broil the potatoes for the last 3–5 minutes of roasting.
