  • 1 lb beef sirloin, cut into 1-inch cubes
  • 1 tsp kosher salt, divided
  • 0.5 tsp black pepper, divided freshly ground
  • 1 tbsp olive oil
  • 3 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1.5 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 0.5 cup reserved pasta water (as needed)
  • 2 tbsp fresh parsley, chopped for garnish

Instructions
 

  • Bring a large pot of salted water to a boil. Cook bowtie pasta until al dente. Reserve 1/2 cup pasta water, then drain.
  • Meanwhile, heat olive oil in a large skillet over medium-high. Season beef with half the salt and pepper; sear 2–3 minutes per side until browned. Transfer to a plate; tent to keep warm.
  • Reduce heat to medium. Add butter; when melted, sauté garlic 30 seconds.
  • Stir in heavy cream and remaining salt and pepper; simmer 3–4 minutes until slightly thickened.
  • Whisk in Parmesan until smooth. Loosen sauce with splashes of reserved pasta water if needed.
  • Add drained pasta and any beef juices to the skillet; toss to coat. Fold in the seared beef. Garnish with parsley and serve.

Notes

For extra richness, blend in 1–2 oz cream cheese before adding Parmesan. Slice beef across the grain and avoid overcooking for the juiciest bites.
