Cook the bowtie pasta in salted boiling water until al dente. Drain and reserve ¼ cup pasta water.
Season chicken breasts with Cajun seasoning.
Heat olive oil and 1 tbsp butter in a skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden and cooked through. Remove and rest.
Lower heat to medium. Add remaining butter and minced garlic. Sauté for 1 minute.
Stir in heavy cream and simmer for 2-3 minutes. Gradually add mozzarella, stirring until smooth and creamy.
Toss pasta into the sauce, using reserved pasta water to adjust consistency if needed.
