Ingredients
  

  • 12 oz linguine pasta
  • 1 lb sirloin or ribeye steak
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes (optional)
  • 1 1/2 cups heavy cream
  • 8 oz Velveeta cheese, cubed
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper, to taste

Instructions
 

  • Season beef with Cajun seasoning. Heat olive oil in a skillet and sear until browned. Remove and set aside.
  • Cook linguine in salted boiling water until al dente. Drain and reserve 1 cup of pasta water.
  • In the same skillet, melt butter and sauté garlic until fragrant. Add cherry tomatoes if using.
  • Pour in heavy cream and simmer. Stir in Velveeta cubes until melted and smooth. Add Parmesan cheese and adjust seasoning.
  • Toss linguine into the sauce, adding reserved pasta water if needed. Return beef to skillet and mix everything together.
  • Garnish with parsley and extra Parmesan before serving.

Notes

For extra spice, add crushed red pepper flakes or a splash of hot sauce. To keep leftovers creamy, stir in a splash of milk or cream when reheating.
