  • 2 cups cauliflower florets, steamed and mashed
  • 2 large eggs
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley or dill
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil, for frying

Instructions
 

  • Steam or boil the cauliflower florets until tender but not mushy. Drain and pat dry with a kitchen towel.
  • In a large bowl, mash the cauliflower lightly. Add eggs, breadcrumbs, Parmesan cheese, garlic, herbs, salt, and pepper. Mix until combined.
  • Scoop out small portions and shape into patties.
  • Heat olive oil in a skillet over medium heat. Fry each fritter for 3–4 minutes per side until golden and crispy.
  • Drain on paper towels and serve warm with your favorite dipping sauce.

Notes

For extra crispiness, coat the fritters lightly in breadcrumbs before frying. You can also bake them at 400°F for 20 minutes for a healthier option.
