  • 12 oz rotini pasta
  • 2 boneless skinless chicken breasts
  • 3 cloves garlic minced
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 1.5 cups heavy cream
  • 0.75 cup grated Parmesan cheese
  • 0.5 cup shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley optional, for garnish

Instructions
 

  • Bring a pot of salted water to a boil and cook rotini pasta until al dente. Drain and set aside.
  • Dice chicken into bite-sized chunks and season with salt, pepper, and Italian seasoning.
  • Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat. Sear chicken until golden and fully cooked. Set aside.
  • In the same skillet, reduce heat and add remaining butter. Sauté garlic for 1 minute until fragrant.
  • Stir in heavy cream, bring to a simmer, then add Parmesan and mozzarella cheese. Stir until smooth.
  • Toss in the cooked rotini and coat well with sauce. Simmer for 1-2 minutes.
  • Add seared chicken on top or mix in. Garnish with parsley and serve warm.

Notes

For extra creaminess, add an additional 1/4 cup of mozzarella at the end.
Let the sauce simmer gently—do not boil or it may separate.
