Ingredients
  

  • 500 g chicken breast or thigh pieces
  • 0.5 cup cornstarch
  • 0.5 cup all-purpose flour
  • 4 tbsp butter
  • 4 cloves garlic, minced
  • 1 tsp chili flakes
  • 1 tbsp hot sauce
  • 300 g rotini or fusilli pasta
  • 1 cup sweet corn kernels
  • 1.5 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tbsp Cajun seasoning
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish
  • Vegetable oil, for frying

Instructions
 

  • Pat chicken dry and coat in cornstarch, flour, salt, and pepper.
  • Boil pasta until al dente, reserve 1 cup pasta water, drain.
  • Fry chicken in hot oil until golden and cooked through.
  • Melt butter in skillet, sauté garlic and chili flakes, stir in hot sauce. Toss chicken in sauce.
  • In another pan, melt butter, add corn, Cajun seasoning, heavy cream, and Parmesan. Simmer until smooth. Adjust with pasta water.
  • Toss pasta in Alfredo sauce, serve with chicken bites, garnish with parsley.

Notes

For extra spice, increase chili flakes or hot sauce. Reheat chicken in oven to maintain crispiness.
