Ingredients
  

  • 2 chicken breasts or thighs
  • 8 oz pasta (fettuccine or penne)
  • 2 tbsp Cajun seasoning
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 0.5 cup Parmesan cheese, grated
  • 1 cup mozzarella cheese, shredded
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 2 tbsp fresh parsley, chopped
  • Salt and black pepper to taste

Instructions
 

  • Pat chicken dry, season with Cajun seasoning, and sear in olive oil and butter 4-5 minutes per side until golden and cooked through. Remove and rest.
  • Cook pasta in salted boiling water until al dente. Reserve 1/2 cup pasta water. Drain and set aside.
  • In the skillet, sauté minced garlic in remaining butter until fragrant. Stir in heavy cream, simmer gently, and add Parmesan and mozzarella until creamy.
  • Toss pasta with the sauce, adding reserved pasta water as needed for consistency.
  • Slice chicken and place on top of pasta. Garnish with fresh parsley and extra Parmesan before serving.

Notes

1. For extra heat, add a pinch of cayenne pepper or red pepper flakes to the sauce.
2. Reheat leftovers with a splash of milk or cream to maintain the creamy texture.
