Ingredients
  

  • 2 chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons fresh parsley, chopped
  • 8 ounces rotini pasta
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika

Instructions
 

  • Pat chicken breasts dry and season with salt, pepper, and paprika.
  • Heat olive oil and butter in a skillet over medium-high heat, sear chicken 4–5 minutes per side until golden. Remove and set aside.
  • Reduce heat to medium, add garlic, sauté for 30 seconds.
  • Pour in cream, scrape pan, stir in parmesan until smooth. Adjust seasoning.
  • Cook pasta in salted water until al dente, drain, toss with mozzarella.
  • Return chicken to sauce, simmer 3–4 minutes.
  • Serve pasta topped with chicken and sauce, garnish with parsley.

Notes

Add a pinch of red pepper flakes to the sauce for subtle heat. For extra creaminess, stir in a tablespoon of cream cheese with the parmesan.
