Ingredients 4 medium golden beets 4 cups mixed greens 4 ounces goat cheese 1 cup walnuts 1 small red onion thinly sliced 3 tablespoons olive oil 1 tablespoon balsamic vinegar Salt and black pepper to taste
Preheat oven to 400°F. Scrub and trim beets, wrap in foil, and roast for 45–60 minutes until fork-tender.
Let beets cool slightly, peel, and slice into rounds or wedges.
Toast walnuts in a dry skillet over medium heat for 3–5 minutes until fragrant. Set aside.
