  • 4 medium golden beets
  • 4 cups mixed greens
  • 4 ounces goat cheese
  • 1 cup walnuts
  • 1 small red onion thinly sliced
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and black pepper to taste

Instructions
 

  • Preheat oven to 400°F. Scrub and trim beets, wrap in foil, and roast for 45–60 minutes until fork-tender.
  • Let beets cool slightly, peel, and slice into rounds or wedges.
  • Toast walnuts in a dry skillet over medium heat for 3–5 minutes until fragrant. Set aside.
  • In a small bowl, whisk olive oil, balsamic vinegar, salt, and pepper.
  • Arrange greens on a serving dish. Top with beets, goat cheese, red onion, and walnuts.
  • Drizzle with vinaigrette and gently toss to coat before serving.
