In a small saucepan, whisk together 2 egg yolks, lemon juice, zest, 1/4 cup sugar, and a pinch of salt. Cook over medium-low heat until thickened. Stir in 2 tablespoons of butter, let cool, and refrigerate.
In a bowl, cream 1 cup butter with remaining sugar. Add 1 egg yolk and vanilla extract.
Mix in flour, cornstarch, lemon zest, and salt. Chill dough for 30 minutes.
Flatten a scoop of dough, fill with a bit of chilled lemon curd, and seal. Roll into a ball and place on a baking sheet.
Bake at 350°F for 10–12 minutes. Cool completely.
