  • 1 cup granulated sugar
  • 3 egg yolks
  • 2 cups all-purpose flour
  • 2 tablespoons lemon zest
  • 3 tablespoons lemon juice
  • 1 tablespoon cornstarch
  • 3 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup granulated sugar (for brûlée topping)

Instructions
 

  • In a small saucepan, whisk together 2 egg yolks, lemon juice, zest, 1/4 cup sugar, and a pinch of salt. Cook over medium-low heat until thickened. Stir in 2 tablespoons of butter, let cool, and refrigerate.
  • In a bowl, cream 1 cup butter with remaining sugar. Add 1 egg yolk and vanilla extract.
  • Mix in flour, cornstarch, lemon zest, and salt. Chill dough for 30 minutes.
  • Flatten a scoop of dough, fill with a bit of chilled lemon curd, and seal. Roll into a ball and place on a baking sheet.
  • Bake at 350°F for 10–12 minutes. Cool completely.
  • Sprinkle sugar on top and torch until caramelized. Let cool before serving.
