  • 2 boneless skinless chicken breasts
  • 8 oz penne pasta
  • 8 oz cremini or baby bella mushrooms sliced
  • 1 cup heavy cream
  • 3 cloves garlic minced
  • 1 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • salt and black pepper to taste
  • 2 tablespoons chopped fresh parsley for garnish

Instructions
 

  • Season chicken with salt and pepper. Heat olive oil and butter in a skillet over medium-high heat. Sear chicken until golden and cooked through. Set aside.
  • In the same skillet, sauté mushrooms until browned. Add garlic and cook until fragrant.
  • Reduce heat and stir in heavy cream. Simmer until slightly thickened.
  • Return chicken to skillet and cook a few more minutes to blend flavors.
  • Meanwhile, cook pasta according to package directions. Drain and add to the skillet.
  • Stir in Parmesan cheese. Toss everything together to coat.
  • Garnish with chopped parsley and serve hot.

Notes

For extra flavor, add a splash of white wine to the sauce before simmering.
