  • 60 ml red wine vinegar or white wine vinegar
  • 2 cloves garlic, minced
  • 1 tsp Dijon mustard
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 0.25 tsp crushed red pepper flakes (optional)
  • 1 tsp sugar or honey
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Instructions
 

  • Combine olive oil and vinegar in a bowl or jar and whisk until emulsified.
  • Mix in garlic, Dijon mustard, oregano, and basil.
  • Add sugar or honey, salt, and black pepper. Stir to combine.
  • Add red pepper flakes if desired.
  • Let rest for 10–15 minutes before tossing with pasta salad.

Notes

Store in an airtight jar for up to 5 days. Shake well before using.
