Ingredients
  

  • 1 lb ground beef (or pork)
  • 1/2 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 1 tbsp soy sauce
  • 1/2 cup Korean BBQ sauce
  • 8 small tortillas
  • 1 cup shredded cabbage
  • 1/2 cup shredded carrots
  • 2 green onions, sliced
  • 1 tsp sesame seeds

Instructions
 

  • In a large bowl, combine ground beef, breadcrumbs, egg, garlic, ginger, and soy sauce. Mix gently until combined.
  • Shape mixture into 1-inch meatballs. Cook in a skillet over medium heat with a bit of oil for 8–10 minutes until browned and cooked through.
  • Lower heat and toss the meatballs in Korean BBQ sauce until coated and glossy.
  • Mix cabbage and carrots in a bowl. Optionally, add a drizzle of sesame oil or rice vinegar.
  • Warm tortillas, add slaw, top with meatballs, and garnish with green onions and sesame seeds. Serve immediately.

Notes

For extra spice, add gochujang to the BBQ sauce. Assemble tacos just before serving for best texture.
