  • 2 large eggs

Instructions

  • In a bowl, combine mashed potatoes, eggs, cheddar, melted butter, chives, salt, and pepper until smooth.
  • Fill muffin cups about 3/4 full.
  • Bake 20–25 minutes, until puffed and golden with crispy edges.
  • Cool 5 minutes, loosen edges, and serve warm.

Notes

Use cooled mashed potatoes for cleaner release and better puff. Sprinkle extra cheddar on top in the last 3 minutes for a melty cap.
