Ingredients
  

  • 450 g ground beef
  • 1 packet taco seasoning
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 1 cup salsa
  • 8 medium flour or corn tortillas
  • 1.5 cups shredded cheddar cheese
  • 1.5 cups shredded Monterey Jack cheese
  • 0.5 cup sour cream
  • 2 tablespoons fresh cilantro, chopped
  • 0.5 cup diced tomatoes

Instructions
 

  • Brown the beef and aromatics: In a large skillet, cook ground beef over medium heat until browned. Add diced onion and minced garlic, cooking until fragrant. Drain excess fat.
  • Season and simmer: Stir in taco seasoning, tomato sauce, and salsa. Simmer for 5–7 minutes.
  • Prepare the tortillas: Lightly toast tortillas in a dry skillet for 30 seconds per side.
  • Layer the casserole: In a greased baking dish, layer beef mixture, tortillas, and cheese. Repeat, finishing with cheese on top.
  • Bake to perfection: Cover with foil and bake at 375°F (190°C) for 20 minutes. Remove foil and bake another 10 minutes until cheese is bubbly and golden.
  • Garnish and serve: Rest 5 minutes before slicing. Top with sour cream, cilantro, and diced tomatoes.

Notes

Lightly toasting tortillas helps them hold their structure. Add chopped jalapeños for extra heat.
