Ingredients
  

  • 2 lbs chicken thighs or breasts, cut into bite-size pieces
  • 3 cups cooked wild rice blend
  • 2 cups broccoli florets
  • 1 cup red bell pepper, sliced
  • 1 cup yellow bell pepper, sliced
  • 1 cup snap peas
  • 1 cup carrots, thinly sliced
  • 0.5 cup red onion, sliced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 1 cup teriyaki sauce
  • 2 tbsp sesame seeds
  • 2 tbsp green onions, chopped
  • 2 tbsp vegetable oil for cooking

Instructions
 

  • Prepare all ingredients: slice chicken and veggies, mince garlic and ginger.
  • Cook wild rice according to package instructions; keep warm.
  • Heat 1 tbsp oil in a wok or skillet over medium-high. Sear chicken 4–5 min until golden. Remove and set aside.
  • Add remaining oil; stir-fry carrots, broccoli, and bell peppers 3–4 min. Add snap peas and red onion; cook until crisp-tender.
  • Return chicken, add garlic and ginger, and pour in teriyaki sauce. Simmer 2–3 min to coat everything.
  • Serve hot over wild rice. Garnish with sesame seeds and green onions.

Notes

1. For extra flavor, marinate chicken in a few tablespoons of teriyaki sauce for 30 minutes before cooking.
2. Add a pinch of red pepper flakes for a mild heat kick.
