Ingredients

  • 2 pounds boneless, skinless chicken thighs or breasts
  • 1 can (20 oz) pineapple chunks with juice
  • 0.5 cup soy sauce
  • 0.33 cup brown sugar
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 teaspoon grated fresh ginger
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • chopped fresh parsley or green onions for garnish

Instructions
 

  • Optional: Sear the chicken in a skillet until browned for extra flavor.
  • Whisk together pineapple juice, soy sauce, brown sugar, garlic, ginger, and onion in a bowl.
  • Place chicken in the slow cooker. Pour sauce over and top with pineapple chunks.
  • Cook on LOW for 5-6 hours or HIGH for 3-4 hours.
  • Shred chicken, return to slow cooker, and mix with sauce.
  • Stir in cornstarch slurry, cook on HIGH for 15-20 minutes until thickened.
  • Garnish and serve hot.

Notes

Leftovers can be refrigerated for 4 days or frozen for 2 months. Reheat with a splash of water to revive sauce.
