Ingredients
  

  • 2 large chicken breasts, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 2 tsp Cajun seasoning
  • 1.5 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 0.5 cup sun-dried tomatoes, chopped
  • 12 oz fusilli pasta, cooked al dente
  • 0.25 cup fresh parsley, chopped
  • 0.5 tsp black pepper
  • to taste salt

Instructions
 

  • Heat olive oil and butter in a skillet. Season and cook chicken 6-8 minutes. Remove.
  • Add minced garlic and sauté until fragrant, about 1 minute.
  • Pour in heavy cream and Cajun seasoning. Simmer 3-5 minutes.
  • Stir in Parmesan cheese until creamy.
  • Mix in chopped sun-dried tomatoes.
  • Add chicken and pasta, toss to coat, garnish and serve.

Notes

Add milk when reheating to restore creaminess. Extra Parmesan enhances flavor.
