  • 2 lbs boneless chicken breast or thighs
  • 2 tbsp olive oil
  • 3 tbsp butter (for chicken)
  • 4 cloves garlic, minced
  • 1 tbsp Cajun seasoning
  • 12 oz twisted pasta (fusilli or rotini)
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tbsp butter (for sauce)
  • 2 tbsp fresh parsley, chopped
  • salt and pepper to taste

Instructions
 

  • Cut chicken into bite-sized cubes and toss with Cajun seasoning, olive oil, salt, and pepper.
  • Heat olive oil in a skillet and sear chicken bites in batches until golden and cooked through. Remove and set aside.
  • Reduce heat, add butter to the skillet, and sauté minced garlic until fragrant. Return chicken and toss in the garlic butter glaze.
  • Cook pasta in salted water until al dente. Reserve ½ cup of pasta water and drain.
  • In a separate pan, melt butter with a splash of olive oil. Add Cajun seasoning, then stir in heavy cream. Simmer and add Parmesan cheese until smooth. Adjust consistency with reserved pasta water if needed.
  • Toss pasta in the Cajun Alfredo sauce, then serve with garlic butter chicken bites on top or mixed in. Garnish with parsley and extra Parmesan.

Notes

1. For extra spice, increase Cajun seasoning or add a pinch of red pepper flakes.
