Description

Easy Sheet Pan Sausage with Vegetables is the kind of dinner that makes busy nights feel a whole lot easier. Juicy smoked sausage, tender baby potatoes, crisp roasted broccoli, and sweet bell peppers all cook together on one pan for a flavorful easy dinner with hardly any cleanup. This is one of my favorite weeknight meals because it is hearty, colorful, family-friendly, and packed with simple food ideas for anyone needing a quick dinner, easy recipe, meal prep option, or comforting dinner idea.


Ingredients

1 lb smoked sausage, sliced into rounds

1 1/2 lb baby potatoes, halved

3 cups broccoli florets

2 bell peppers, sliced

3 tbsp olive oil

1 tsp garlic powder

1 tsp Italian seasoning

1/2 tsp paprika

1 tsp salt

1/2 tsp black pepper

1/3 cup grated Parmesan cheese

2 tbsp fresh parsley, chopped


Instructions

1. Preheat the oven to 425°F and line a large sheet pan with parchment paper or lightly grease it.

2. Place the halved baby potatoes in a large bowl. Add 1 1/2 tablespoons olive oil, half the garlic powder, half the Italian seasoning, half the paprika, half the salt, and half the black pepper. Toss well.

3. Spread the potatoes on the sheet pan and roast for 10 minutes.

4. In the same bowl, add the sliced sausage, broccoli florets, and bell peppers. Toss with the remaining olive oil, garlic powder, Italian seasoning, paprika, salt, and black pepper.

5. Remove the pan from the oven and add the sausage and vegetables to the pan with the potatoes. Spread everything into an even layer.

6. Roast for 20 to 25 minutes more, stirring halfway through, until the potatoes are tender and the vegetables are roasted.

7. Sprinkle Parmesan cheese over the hot pan and finish with chopped parsley before serving.

Notes

Cut the potatoes into similar sizes so they roast evenly and finish at the same time.

Do not overcrowd the pan or the vegetables will steam instead of getting those delicious browned edges.
